Why would "old" events generate with a different date/time than when they occurred? "Latent Data"

In some cases applications monitored by SaaS Alerts will send data for analysis that exceeds typical time frames yet should still be logged for further analysis. We refer to this data as “latent data” and generate events from this as soon as it has been sent to us by the connection vendor.
